Has you been on a Panama C cruise over the New Year Period?

We are flying into Acapulco on 26th Dec on a P & O Panama C cruise aboard Artemis. This is out first cruise and we would welcome advise on excursions. Our ports of call are Acapulco, Huralcaco, Panama C, Limon, Aruba, St Lucia and Freeport. Can you recommend any excursions and should we pre-book them with the cruise line or are there any we can do independently? Also...what kind of weather can we expect on days at sea....will it be warm enough to swim or will the sea breeze be cold?
